The Nellore kaja is a patient sweet. Dough is rested, rolled paper-thin, brushed with ghee and folded again and again until it holds thirty-two whisper-light layers. Only then does it meet hot ghee, and finally a cardamom syrup cooked to the exact one-string consistency our grandfather insisted on.
