The process is simple to say and difficult to master: rest, roll, fold, fry and finish.

Rested maida dough is rolled into delicate sheets so every bite feels light rather than dense.

Each sheet is brushed with pure ghee and folded repeatedly to create the signature ribboned layers.

Small batches are fried the same morning they are packed, keeping the layers crisp and fragrant.

Finished in syrup
Cardamom sugar syrup is cooked carefully and added while the kaja is fresh from the kadai.
